My ATI Radeon 9800 Pro Mac Special Edition just died. Since my dual 2 GB G5 has a PCI-X slot I am having trouble finding a replacement. All the new cards are PCI Express. Is it possible to still acquire a PCI-X graphics card?

Sure - The ATI X800XT is the KING of AGP 8x graphic cards and the prices have dropped drastically since the PCI Express machines have appeared.
