MPEG Streamclip

As a general rule, when extracting video from a standard definition DVD (yes I have permission) via MPEG Streamclip for import into Final Cut Pro 7, how should I save the file for maximum quality? Project settings are not firm...probably HD 720 P but that is up in the air. DV, Quicktime, or MPEG4? I am guessing Quicktime with quality set high. It offers a number of compression options. Default is Apple Motion JPEG A. Are there any general rules for saving a file for maximum quality regardless of the format of the final project? If I should use HD compression in MPEG Streamclip, which one?
Hmmmm.....

DVD is SD. So I'll get that out in ProRes SD.
