You're still ahead of time, Tania-- there is no affordable transcription software just yet-- not a utility that works well, anyway. Nuance, which acquired MacSpeech, has a product adapted from it called
Scribe, which I've evaluated and found severely wanting. After repeated training, it does work better, but then, you must polish it, and it's limited to six voice profiles and film interviews can range into the dozens, so that's a handicap. But it's $149.00 so one can't complain too heavily.
One method of getting your transcripts done using this product is to train it with your own voice, then convey the audio track of each interview into the system picking up the tracks on earbuds and passing each along in your voice. Worth a try.
As for a post production script? You assemble your paper cut with final selects and add the interstitial visuals, and timecode, and you have a proper script.
