Does Quicktime Conversion automatically de-interlace .mov files created from the time line? Upon selecting the clip's menus WINDOW---MOVIE PROPERTIES, then alternately checking/unchecking the "single field" box, nothing happens. If the clips truly are interlaced, the fields should change accordingly, shouldn't they? If true, how do I preserve interlaced properties before export?

Have you tried it?
If it won't work, use Compressor. You can use the presets, or tweak your own deinterlace settings.

No it doesn't, at least the last time I tried it in FCP 5.1 (that's also how long since I've used QT conversion). There's a checkbox to deinterlace videos in QT conversion. Make sure that is not checked. Also, make sure you are not resizing your videos.

I'm not sure how you are checking fields.

Make sure high quality video is checked.

On moving objects, you should be able to see a combing effect. This will be extremely evident on fast moving objects on a still frame.
