I shot HDV 30 with a Canon HV30 (1080i30fps), and now I'm wondering if I should capture at HD or HDV in Easy Setup to get the best quality.

HDV is the way to go.

Thanks Harry. Have you ever captured HDV converted to ProRes or AIC?

Yes. I have indeed captured with both of those codecs.
