If a simple menu(s) means that you can use one of the template menus provided in iDVD , then I don't now why you couldn't use iDVD. DVD Studio gives you the ability to use/develop custom menus and tighter control over parameters, but a simple DVD is perfect for iDVD.
When you say you want it to play everywhere, then you are taking a gamble about iDVD's background encoding bitrates for MPEG-2 creation.
""Then I want to have it duped."" What does duped mean? Burn copies of the DVD or do you mean replicated? If you are going to replication, I can't see using stock iDVD menus and the control you need is not there in iDVD.
