Okay. HD DVD is obsolete. Blu-Ray is where it's at, but you'll need Toast 9 or Encore to author a Blu-Ray in OSX. You'll also need to get a Blu-Ray burner (doesn't come with a default mac kit), and your client needs a Blu-Ray player to play it. It's a fairly new format (not sure if i can still use this word to describe Blu-Ray). It uses a blue laser instead of the red lasers used by DVDs.

Best Quality would be a good preset. Also, Jake's post is very informative. Also, if you want a really good DVD and have the time to encode, turn on frame controls (it's the 2nd or 3rd tab) and set resizing to "best". I find it pretty sluggish, so I don't really use it that much, but it resizes excellently and I use it sometimes for web.
