Just picked up Sound Track Pro and I am wondering if there is a way to tame "wind rumbles" on my sound track?

Most probably, YES! Exactly what Apple showed at NAB. I believe you can do just that!
That's comforting. Hmmm, I wonder how you can do it....

I would suggest that you go through the tutorial provided to learn about it's value.
What is the definition of the "wind rumbles?" I've looked through the Soundtrack Pro manual with no luck.

Does anybody know the professional terminology?

Not sure of a technical term for it but the rumble you're hearing is not uncommon with wind noise. It's in the lower frequencies.

You can roll off the lower frequencies with EQ. Try 100hz and see whether you need to go higher or lower but that should get you close. You could use some of the nifty noise reduction features in STP though. Depending on your content you'll have to see what does least damage to the sound.
