I'm sure this has been discussed many times but a search didn't turn up the results I was hoping for.

Is there an easy way to do frame grabs, like Command - [something] that will export a frame grab?

Apple-shift-3 grabs the whole screen
Apple-shift-4 gives you a crosshair tool that allows you to select whatever you want.

and Apple-shift-4 + space bar gives you a "window camera"
it'll take a snap of whatever window you hover over.

if you mean exporting still images from your video in FCP:

park on a frame,
File Menu > Export > Using Quicktime Conversion
Choose "Still Image" from the drop-down menu.
use the "Options" button to establish a format, ie TIFF, JPEG, Photoshop, etc.

if you have a lot to do, collect your frames in a bin, and File Menu > Export > Batch Export.
i've found making subclips of your desired frames helps,
as you can name the subclip after the image.

Yes I meant exporting a still image from the FCP timeline.

Having to "File Menu > Export > Using Quicktime Conversion Choose "Still Image" from the drop-down menu, use the "Options" button to establish a format, ie TIFF, JPEG, Photoshop, etc." sucks

I can't believe that exporting a still from the timeline can't be mapped to a single key stroke. Isn't there an easier way to accomplish this?

nope

you could match-frame, mark in/out, and export as a QuickTime Movie.
a 1frame move export should behave as a still file, i thnk.

also, once you establish a format (TIFF< Jpeg, wet c) you don't have to re-establish for each export.

as i say, if you have more than a few,
use Batch Export.

oh, and map shortcuts. i use:

Export > QuickTime Movie = Apple E
Export w QuickTime Conversion = Option Apple E
Batch Export = Shift Apple B
