I use FCP or any other program while burning my DVD?

FCP will be a little slow... The DVD will be fine, but you'll get a little impatient after a while and let the machine burn the thing while you go for tea.

i always leave idvd burning the DVD at night when I go to bed....

I remember when I had PC, while burning a CD or DVD you were not supposed to use the computer, no even for checking email....
